Biscoff Brownies

These Biscoff brownies are the kind of dessert that disappears before it has time to cool. Picture a rich, fudgy chocolate brownie base, a gooey cookie butter layer hiding in the middle, and crunchy Biscoff cookies scattered across the top with a glossy drizzle of melted cookie butter. Every single bite gives you soft, chewy, and crisp all at once.

The brownie base is the same one I use for the M&M chocolate brownies on the blog, and that is completely on purpose. It is ultra fudgy, dependable, and sturdy enough to hold a soft cookie butter center without turning cakey.

One batch makes 16 servings and takes about 55 minutes from start to finish, so it works for a quiet Sunday afternoon or a last minute bake sale with equal ease.

I have made these more times than I can count, and the reaction is always the same. Someone takes one square, then quietly comes back for a second one before the pan has even cooled. That is the whole point of a brownie like this.

If you love the warm, spiced flavor of Biscoff, make this one first. Then make it again.

Ingredient Notes and Substitutions

A few ingredients carry the whole recipe, so it helps to know what each one is doing before you start measuring.

  • Biscoff cookie butter. You can find it in most grocery stores, on Amazon, and at Trader Joe’s under the name Speculoos Spread. This is what creates the gooey center, so it is not optional.
  • Unsweetened Dutch cocoa powder. This is the key to ultra rich, fudgy brownies, and Ghirardelli is my preferred brand. Dutch cocoa is darker and smoother than natural cocoa, and you can taste the difference in the finished brownie.
  • Espresso powder. Optional, but highly recommended. It does not make the brownies taste like coffee. It intensifies the richness and flavor of the chocolate.
  • An extra egg yolk. That single yolk adds richness and moisture, which is exactly what pushes these from fudgy to extra gooey.

Full measurements and the complete method are in the recipe card further down this page.

  1. Freeze the cookie butter layer. Spread the cookie butter evenly inside the creased edges of a sheet of parchment paper, then freeze it until firm. Do not start the batter until that layer is completely firm, or it will stick to the paper.
  2. Whisk the wet ingredients. Combine the sugars, eggs, and vanilla extract until the mixture is thick and pale.
  3. Melt the chocolate. Melt the butter and chocolate chips together in a medium bowl, on the stove or in the microwave, until smooth, then whisk in the cocoa powder.
  4. Bring them together. Pour the melted chocolate mixture into the egg mixture in a steady stream, whisking only until just combined.
  5. Fold in the dry ingredients. Use a rubber spatula to fold in the flour mixture until just combined. Stop right there. Overmixing makes tough brownies.
  6. Layer the pan. Spread half of the brownie batter in the prepared pan, set the frozen cookie butter layer on top, then cover it with the remaining batter.
  7. Top and bake. Scatter crushed Biscoff cookies over the surface, drizzle with melted cookie butter, then bake. Let the brownies cool completely afterward.

Tips for Perfect Brownies

These are the small habits that separate good brownies from unforgettable ones.

  • Weigh your ingredients. A kitchen scale is the number one baking tip I can give you. It removes all the guesswork.
  • Freeze the Biscoff layer until it is completely firm. If it is still soft when you use it, it will stick to the parchment paper and refuse to come off.
  • Use a metal pan. Glass and ceramic retain heat differently, so they need longer baking times.
  • Expect a longer bake in other pans. A pan with rounded edges, or one that is not metal, will need extra time in the oven.
  • Do not overmix the batter. Fold just until the flour disappears. Extra mixing builds gluten, and gluten makes brownies tough.

Fudgy brownies are all about restraint. Measure carefully, mix just until combined, and pull the pan out while the center is still slightly soft.

Storage and Freezing

Leftover brownies keep beautifully in an airtight container at room temperature for 2 to 3 days. After baking, they can also be frozen in an airtight container or a freezer bag for up to 1 month.

Thaw them at room temperature when a craving hits, and warm a single square for a few seconds if you want that gooey center back.

Ingredients

This recipe makes 16 servings and is built in three simple parts: the cookie butter layer, the brownie batter, and the topping.

The flour measurement is worth a second look. Use the spoon level method described in the notes below rather than scooping straight from the bag.

Instructions

  1. Press a large piece of parchment paper into a square metal 8×8 baking pan and crease the bottom edges, so that when you lift the paper out you can see the outline of the pan. Spread the 3/4 cup of cookie butter evenly inside the creased edges, then chill it in the freezer until firm. Check that the layer is completely firm before you start the batter.
  2. Line the baking pan with parchment paper so it hangs off all four sides for easy removal, then preheat the oven to 350 F / 180 C.
  3. Whisk together the sugars, eggs, and vanilla extract until well combined.
  4. Melt the butter and chocolate chips together until smooth. Whisk in the cocoa powder, then whisk the melted chocolate mixture into the egg mixture until just combined.
  5. Fold in the flour, espresso powder, and salt until just combined.
  6. Pour about half of the brownie batter, roughly 340 grams, into the pan and spread it to the edges. Place the frozen cookie butter square on top of the batter, peeling the parchment paper off the top. Pour the rest of the batter on top and spread it evenly to the edges.
  7. Break up the 4 to 5 Biscoff cookies into pieces and press them on top of the batter. Warm 2 tablespoons of cookie butter in the microwave for 15 to 20 seconds, until runny, and drizzle it over the top.
  8. Bake the brownies in the preheated oven for 30 to 40 minutes, until a toothpick inserted into the center comes out covered in a few moist crumbs. Let the pan cool completely on a wire rack before removing the brownies. You can drizzle a little more cookie butter on top before cutting.
  9. Store leftovers in an airtight container at room temperature for 2 to 3 days. They can be frozen after baking in an airtight container or a freezer bag for up to 1 month.

One quick reminder: that toothpick should never come out clean. A few moist crumbs clinging to it mean the center is still soft and gooey, which is exactly what you want.

Notes

Measure your flour properly and these brownies will turn out fudgy every single time. Never scoop the measuring cup straight into the flour bag. That packs the flour down and adds far more than the recipe calls for, which is the fastest route to dry, crumbly brownies.

Instead, fluff the flour with a spoon, then spoon it into your measuring cup and level it off. A kitchen scale gives the best results of all, so use it if you have one.

Cutting matters too. Wait until the brownies are completely cool, which can take a few hours, because a warm center will smear. Run a sharp knife under hot water, dry it, and wipe it clean between cuts. You will get clean, bakery style squares with sharp edges and a visible cookie butter layer in every slice.

FAQs

How do you make Biscoff brownies?

To make Biscoff brownies, you first freeze a 3/4 cup layer of Biscoff cookie butter in an 8×8 pan. Then you prepare a fudgy brownie batter by whisking together sugars, eggs, and vanilla, and folding in melted butter, chocolate chips, Dutch cocoa powder, flour, espresso powder, and salt. You layer half the batter, place the frozen cookie butter on top, cover with the remaining batter, and bake at 350°F for 30 to 40 minutes until a toothpick comes out with moist crumbs.

Where can I buy Biscoff cookie butter?

Biscoff cookie butter is widely available in the peanut butter aisle of most grocery stores in the United States. It can also be purchased online through Amazon or found at Trader Joe's, where it is sold as Speculoos Spread. Both the creamy and crunchy versions work, though creamy is preferred for a smooth center layer.

How do you keep Biscoff brownies fudgy?

To keep these brownies fudgy, use Dutch-process cocoa powder and an extra egg yolk for richness and moisture. Bake only until a toothpick inserted in the center comes out with a few moist crumbs, not clean. Using a metal baking pan and measuring flour with the spoon-and-level method or a kitchen scale also helps achieve the ideal fudgy texture.

Can you freeze Biscoff brownies?

Yes, you can freeze Biscoff brownies for up to one month. After they have cooled completely, store them in an airtight container or a freezer-safe bag. For best results, wrap each brownie individually in plastic wrap before placing them in the freezer, and thaw at room temperature for about 30 minutes before serving.
