3-pound skinless boneless turkey breast

6 tablespoons unsalted butter, softened

Kosher salt (amount as needed for seasoning)

Ground black pepper (amount as needed for seasoning)

1 teaspoon garlic powder

½ pound mild Italian sausage, casings removed

2 tablespoons unsalted butter (for stuffing)

½ cup finely diced yellow onion

½ cup finely diced celery

1 cup chicken broth (plus more as needed)

6-ounce box of herb stuffing mix

Instructions

1-Cook the Italian sausage in a large skillet over medium-high heat until browned, breaking it into crumbles and pushing it to one side.

2-In the same skillet, melt 2 tablespoons of unsalted butter and sauté the diced onion and celery for about 5 minutes, then mix it with the sausage.

3-Add the herb stuffing mix and stir in 1 cup of chicken broth gradually until it’s moist, adding more broth if needed to reach the right texture.

4-Butterfly the turkey breast by slicing it horizontally almost through and open it like a book for even spreading.

5-Cover the turkey with plastic wrap and pound it to about ½ inch thickness, then season with kosher salt and ground black pepper.

6-Spread the prepared stuffing over the turkey breast, leaving a ⅓ inch border around the edges.

7-Roll the breast tightly from the longer side and tie it securely with kitchen twine at intervals to hold its shape.

8-Mix the softened unsalted butter with kosher salt, ground black pepper, and 1 teaspoon garlic powder; rub half of this mixture over the roulade.

9-Place the roulade in a baking dish and cook for 55 to 60 minutes.

10-During the last 20 minutes, increase the oven temperature to 400°F and drizzle the remaining melted butter over the roulade.

11-Cook until the internal temperature reaches 165°F, ensuring it’s fully done.

12-Let it rest for 15 minutes before removing the twine, slicing, and serving for the best results.
