Ingredients

– 1 ½ to 2 cups cherry tomatoes

– 2 to 3 ripe peaches

– 1 cup pitted fresh cherries

– 8 ounces burrata cheese

– ¼ cup toasted pumpkin seeds or nuts/seeds

– ½ cup extra virgin olive oil

– ¼ cup balsamic or champagne vinegar

– 1 tablespoon honey

– ½ shallot, minced

– 1 clove garlic, minced

– 1 teaspoon lemon zest

– ¼ cup fresh lemon juice

– 2 tablespoons chopped fresh basil leaves

– 1 tablespoon chopped fresh oregano

– 1 tablespoon chopped fresh dill

– Salt, black pepper, and red pepper flakes to taste

Instructions

1-First Step: Prepare the Fruit Rinse and pat dry the cherry tomatoes. Slice the peaches into thin wedges, and pit and halve the fresh cherries. Combine these fruits in a large mixing bowl to create a vibrant base for the salad.

2-Second Step: Make the Vinaigrette In a medium bowl, whisk together extra virgin olive oil, balsamic or champagne vinegar, honey, minced shallot, minced garlic, lemon zest, lemon juice, chopped basil, oregano, and dill. Add salt, black pepper, and red pepper flakes to taste. Whisk until emulsified and aromatic.

3-Third Step: Marinate the Fruit Pour one-third of the vinaigrette over the mixed tomatoes, peaches, and cherries. Toss gently to coat and let the fruit marinate at room temperature for 15 minutes, or refrigerate for up to 4 hours to deepen the flavors.

4-Fourth Step: Assemble the Salad Transfer the marinated fruit to a serving bowl or platter. Tear or break apart the burrata cheese over the fruit, letting the creamy center drizzle naturally. Drizzle the remaining vinaigrette over the top evenly.

5-Final Step: Garnish and Serve Sprinkle toasted pumpkin seeds or your choice of nuts/seeds over the salad for crunch and contrasting texture. Garnish with extra fresh basil leaves if desired.
