Ingredients

– 1 pound ground chicken

– 2 green onions, trimmed and finely minced

– 1 large egg

– Zest of half a lime

– 1/2 cup panko breadcrumbs

– 1 tablespoon minced fresh cilantro

– 1 tablespoon grated lemongrass

– 1 tablespoon grated ginger

– 1 tablespoon grated garlic

– 1 teaspoon kosher salt

– 1/4 cup sweet chili sauce

Instructions

1-First, preheat your oven to 350°F (175°C) and lightly spray an 8×8 inch baking dish with nonstick spray to keep things from sticking.

2-In a large bowl, thoroughly combine 1 pound ground chicken, 2 green onions (trimmed and finely minced), 1 large egg, zest of half a lime, 1/2 cup panko breadcrumbs, 1 tablespoon minced fresh cilantro, 1 tablespoon grated lemongrass, 1 tablespoon grated ginger, 1 tablespoon grated garlic, and 1 teaspoon kosher salt until everything is fully mixed.

3-Shape the mixture into meatballs, each using about 2 tablespoons, and place them in the prepared dish for baking.

4-Next, bake the meatballs for 10 minutes to get them started.

5-Then, remove the dish from the oven and brush the meatballs evenly with 1/4 cup sweet chili sauce to add that sticky glaze.

6-Return them to the oven for another 5 to 10 minutes, or until they’re cooked through and the sauce turns glossy.

7-Finally, serve them warm with extra sweet chili sauce on the side if you like, and pair with sides like rice or veggies for a complete meal.
