Instructions

1-Preheat the oven to 425°F (220°C) to ensure it reaches the right temperature for crisp results.

2-Chop the 8 medium red potatoes into bite-sized pieces and place them in a large bowl for even coating.

3-Drizzle 2 tablespoons of olive oil over the potatoes and toss them thoroughly by hand to coat each piece evenly, which helps with that flavorful crispiness.

4-Sprinkle 1 teaspoon of kosher salt, 1/2 teaspoon of freshly ground black pepper, and about 1 tablespoon of minced rosemary over the potatoes, then toss again to distribute the seasoning perfectly.

6-Roast for 35 to 40 minutes, stirring and turning the potatoes at least once halfway through to ensure they cook uniformly and develop that golden color.
