🥩 Reuben Egg Rolls combine the classic flavors of corned beef, Swiss cheese, and sauerkraut wrapped in a crispy egg roll for a delicious twist.
🧆 Perfect as a fun appetizer or snack, these egg rolls pair wonderfully with tangy Thousand Island dressing for dipping.

  • Total Time: 20 minutes
  • Yield: 10 egg rolls

Ingredients

– 1/3 lb. corned beef or pastrami cut into thin strips for main protein for savory taste

– 5 slices Swiss cheese cut into thin strips adds creamy texture and flavor

– 2 cups sauerkraut drained and squeezed dry brings tanginess and health benefits

– 10 wrappers egg roll wrappers provides the crispy exterior

– Thousand Island Dressing for dipping enhances moisture and complements flavors

Instructions

1-First: heat at least 2 inches of canola oil in a deep fryer or heavy Dutch oven to 375 degrees F.

2-Second: lay out an egg roll wrapper in a diamond shape on a clean surface and brush the edges with water.

3-Third: place a few strips of corned beef in the center, then top with Swiss cheese strips and 1 tablespoon of sauerkraut.

4-Fourth: fold the bottom corner up over the filling, then fold the left and right sides towards the center and roll tightly to seal.

5-Fifth: repeat with the remaining ingredients.

6-Sixth: fry each egg roll for 3 to 4 minutes until golden brown, then remove carefully and drain on paper towels.

7-Finally: serve warm with Thousand Island Dressing for dipping.

For a healthier twist, try the baking option: place egg rolls seam-side down on a baking sheet sprayed with cooking spray, spray the tops, and bake at 425 degrees F for 10 to 15 minutes until lightly browned.

Notes

🧽 Use egg roll wrappers lightly coated with flour for a crisp finish, avoiding spring roll wrappers.
🔒 Ensure a good seal on the wrappers to prevent cheese leakage during frying.
🥩 Substitute corned beef with peppery pastrami for a flavor variation.
