How to Make

The method moves through four stages: cook the quinoa, roast the chickpeas, whisk the dressing, then build the bowls.

  1. Preheat the oven. Set it to 400°F and line a baking sheet with parchment paper.
  2. Cook the quinoa. Rinse and drain the quinoa if you like. Add the quinoa and 1 1/3 cups water to a saucepan and bring to a boil. Reduce to a simmer, cover and cook for 15 minutes. Fluff it with a fork and let it cool for 5 to 10 minutes.
  3. Roast the chickpeas. Add the chickpeas to a mixing bowl with the olive oil, lemon juice, oregano, garlic powder, salt and pepper. Use your hands to coat them well. Pour them onto the prepared baking sheet and bake at 400°F for 20 minutes, flipping them halfway through. Set them aside to cool.
  4. Make the dressing. Whisk the vinaigrette ingredients together in a small bowl and set it aside.
