🍖 This Meatloaf Casserole combines the classic comfort of savory meatloaf with a creamy mashed potato topping for a hearty meal.
🧀 With layers of ground beef, cheddar cheese, and crispy cracker topping, it’s a deliciously satisfying dish that’s perfect for family dinners.

  • Total Time: 1 hour
  • Yield: 6 servings 1x

Ingredients

Scale

1 3/4 to 2 pounds lean ground beef

1/2 cup crushed crackers

1/2 cup finely diced onion

1 teaspoon garlic powder

1 large egg

1/2 cup milk

1/4 cup ketchup

1 tablespoon Worcestershire sauce

1 teaspoon seasoning salt blend (or salt and black pepper)

4 cups mashed potatoes (store-bought or homemade)

1 cup shredded cheddar cheese

1/2 cup shredded cheddar cheese

1/4 cup crushed crackers

2 tablespoons melted butter

Instructions

1-Getting started: Getting started with this meatloaf casserole is as easy as turning on your oven, and I’ve walked through these steps so many times that they feel like second nature. First, preheat your oven to 350 degrees Fahrenheit and grease a 13 by 9-inch baking dish to ensure nothing sticks. This simple prep sets the stage for a seamless baking experience.

2-Combine meatloaf layer ingredients: Next, in a large bowl, combine all the meatloaf layer ingredients: 1 3/4 to 2 pounds lean ground beef, 1/2 cup crushed crackers, 1/2 cup finely diced onion, 1 teaspoon garlic powder, 1 large egg, 1/2 cup milk, 1/4 cup ketchup, 1 tablespoon Worcestershire sauce, and 1 teaspoon seasoning salt blend. Mix gently until just combined to keep the meat tender overmixing is something I avoid to prevent a tough texture.

3-Press meat mixture: Then, press the meat mixture evenly into the prepared baking dish. Bake it for 25 to 30 minutes, or until it’s nearly cooked through. While that’s baking, prepare the mashed potato layer by heating 4 cups of mashed potatoes and stirring in 1 cup of shredded cheddar cheese for that gooey goodness.

4-Add mashed potato layer and toppings: Once the meatloaf is out, drain any excess grease, then spread the cheesy mashed potatoes evenly over the top. Sprinkle on the remaining 1/2 cup of shredded cheddar cheese, and in a small bowl, mix 1/4 cup of crushed crackers with 2 tablespoons of melted butter before sprinkling that over the cheese. Pop it back in the oven for another 15 to 20 minutes until everything is bubbly and golden. Finally, let it cool for 5 minutes before serving it’s a game-changer for family dinners.
