1/2 cup melted vegan butter (118 grams) or coconut oil (90 grams)
1/2 cup maple syrup (150 grams)
1 large egg or 1/2 cup almond milk for vegan option
1 tablespoon powdered sugar for topping (optional)
Instructions
1. Preheat oven to 350 degrees Fahrenheit.
2. In a bowl, whisk together flour, baking powder, salt, and matcha powder.
3. In a separate bowl, mix melted butter (or coconut oil), maple syrup, and egg until fully combined.
4. Combine the dry and wet ingredients, mixing by hand until smooth, about a minute.
5. Scoop the batter evenly into six muffin cups lined with muffin liners, or grease the tins if liners are not available.
6. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean or no bubbling sounds are heard.
7. Let cool slightly, then optionally sift powdered sugar on top before serving.
