Ingredients
– 2 lb stewing beef, trimmed and cubed
– 3 Tbsp all-purpose flour, plus extra for dusting the beef
– ½ tsp garlic powder
– ½ tsp salt, plus additional to taste
– ½ tsp black pepper, plus additional to taste
– 3 Tbsp olive oil (or other cooking oil)
– 1 medium onion, chopped
– 6 cup beef broth (≈ 1.4 L)
– ½ cup red wine (optional)
– 1 lb potatoes, peeled and cubed
– 4 carrots, cut into 1-inch pieces
– 4 ribs celery, cut into 1-inch pieces
– 3 Tbsp tomato paste
– 1 tsp dried rosemary (or 1 sprig fresh rosemary)
– 2 Tbsp cornstarch mixed with an equal amount of cold water (slurry) adjust as needed
– ¾ cup peas, frozen or fresh
– Additional salt & pepper for final seasoning
Instructions
1-First, season and coat the beef. In a shallow bowl, combine the flour, garlic powder, ½ tsp salt, and ½ tsp pepper, then toss the cubed beef in it and set aside. This step locks in those juicy flavors right from the start.
2-Next, heat your pot and brown the beef over medium-high heat to seal in juices. Once done, remove it and sauté the chopped onion in the same pot for about 3 minutes until it softens add a bit more oil if needed.
3-Then, pour in the beef broth and red wine if you’re using it. Scrape up those tasty browned bits from the bottom of the pot to boost the flavor. Return the beef to the pot and add the potatoes, carrots, celery, tomato paste, and rosemary. Stir everything together for even cooking.
4-Reduce the heat to medium-low, cover, and let it simmer for 60-90 minutes until the beef is fork-tender. If you want to thicken it, whisk together the cornstarch slurry and slowly add it while stirring. Finally, mix in the peas and simmer for another 5-10 minutes, then adjust the seasoning with salt and pepper.
