Ingredients

Instructions

1-Preparation: Start by preparing your ingredients to keep things organized wash and chop the kale, dice the potatoes and onion, and mince the garlic so everything flows smoothly.

2-Cooking the sausage: In a large pot over medium heat, cook the 1 pound of Italian sausage until it’s browned, which takes about 5-6 minutes, then set it aside on a plate.

3-Sautéing onions and garlic: Next, add 4 tablespoons of butter to the same pot and sauté the diced ½ white onion until it’s translucent. Follow that by adding 1 tablespoon of minced garlic and cooking for another minute until it’s fragrant.

4-Making the broth: Then, pour in 6 cups of chicken broth, 2 cups of water, the cut yellow potatoes, 3 teaspoons of salt, and 1 teaspoon of black pepper, bringing the mixture to a boil until the potatoes are tender.

5-Final steps: Once the potatoes are soft, stir in the 4 cups of chopped kale and 2 cups of heavy cream, then add the sausage back in. Give it a taste and adjust the seasoning if needed. For an extra touch, serve it hot with optional toppings like chopped bacon or grated parmesan cheese.
