Ingredients
– 2 tablespoons butter
– 1/2 onion, thinly sliced
– 1 small zucchini, sliced in rounds 1/8 to 1/4 inch thick
– 1 small yellow squash, sliced in rounds 1/8 to 1/4 inch thick
– 2 large cloves garlic, minced
– 1/2 cup heavy cream
– 1/4 cup grated parmesan
– 1 cup shredded smoked gouda
Instructions
1-Preheat oven to 450 degrees Fahrenheit.
2-Melt butter in an oven-proof skillet over medium heat.
3-Add onion and cook until edges start to brown, about 5 minutes.
4-Add garlic and cook an additional 1 minute.
5-Add cream and simmer until bubbly and starting to thicken.
6-Slowly stir in parmesan.
7-Add zucchini and yellow squash and cook 4-5 more minutes.
8-Sprinkle with smoked gouda.
9-Bake in the oven for 15-20 minutes until cheese is golden brown.
