Ingredients

– 2/3 cup whole milk Greek yogurt

– 2 tablespoons olive oil

– 2 tablespoons lemon juice

– 1 teaspoon lemon zest

– 1 tablespoon minced garlic

– 1 tablespoon peeled and minced fresh ginger

– 1 teaspoon ground cumin

– 1 teaspoon ground coriander

– 1 teaspoon paprika

– 1/4 teaspoon cayenne pepper

– 1/4 teaspoon cinnamon

– 1 teaspoon salt

– Freshly ground black pepper (to taste)

– 1/4 cup chopped cilantro (plus more for serving)

– 2 1/4 pounds boneless skinless chicken thighs (about 7 thighs) or boneless skinless chicken breasts (about 5)

Instructions

1-Gather all ingredients and prepare your workspace by measuring the yogurt, spices, and juices accurately. Rinse the chicken pieces and pat dry to ensure proper marination.

2-In a mixing bowl, combine the yogurt, olive oil, lemon juice, lemon zest, garlic, ginger, cumin, coriander, paprika, cayenne pepper, cinnamon, salt, black pepper, and cilantro. Whisk until evenly blended you’ll smell the amazing flavors right away!

3-Add chicken pieces into the marinade, making sure each piece is well coated. Cover the bowl and refrigerate for at least 2 hours or overnight for deeper flavor infusion.

4-Preheat your grill or oven to 425°F. If grilling, clean and lightly oil the grates; if baking, line a sheet with foil and spray with nonstick cooking spray.

5-Cook the chicken: For grilling, go 5-7 minutes per side until it reaches 165°F inside. For baking, about 20-25 minutes. Let it rest a bit before serving this keeps it juicy, I promise!

6-Remove from heat and let rest for 5 minutes before serving. Garnish with extra cilantro or a lemon squeeze, and feel free to tweak seasonings to your taste. For dietary swaps, use tofu and reduce cooking time for a vegan version.
