Ingredients
– 1 head cauliflower (about 2 pounds)
– ⅓ cup salted butter, softened
– 2 garlic cloves, minced (or ½ teaspoon garlic powder)
– 1 teaspoon salt
– ¼ teaspoon paprika
– 2 tablespoons parmesan cheese
– 1 tablespoon chives, finely chopped, plus more for serving
– Cauliflower for main base for roasting
– Garlic for flavor enhancer
– Butter helps with crisping
Instructions
1-Preheat the oven to 400°F and trim the bottom of the cauliflower stem with a sharp knife.
2-Place the cauliflower head in an oven-safe skillet or baking pan with at least two-inch high sides.
3-In a small bowl, combine the softened salted butter, minced garlic, salt, and paprika.
4-Rub the seasoned butter evenly over the top and sides of the cauliflower.
5-Loosely cover the cauliflower with foil and bake for 40-50 minutes, until tender in the center.
6-Remove the foil and reduce the oven temperature to 375°F. Baste the cauliflower with the melted butter from the pan.
7-Sprinkle the parmesan cheese and chopped chives on top. Return the cauliflower to the oven uncovered and roast for about 15 more minutes until golden brown, basting with the melted butter every five minutes.
8-Add more chives before serving.
