Instructions
1-Heat 1 tablespoon olive oil in a large pot over medium-high heat.
2-Add 1 diced onion and sauté for 4 minutes, then add 2 cloves garlic finely minced and cook for 30 seconds.
3-Pour in 2 cans (each 14.5 oz) chicken broth, 1 can (7 oz) diced mild green chilies, 1 1/2 teaspoons cumin, 1/2 teaspoon paprika, 1/2 teaspoon oregano, 1/2 teaspoon coriander, 1/4 teaspoon cayenne pepper, salt, and pepper to taste. Bring to a boil, then reduce heat to medium-low and simmer for 15 minutes.
4-Drain and rinse 2 cans (each 15 oz) cannellini beans. Set aside 1 cup whole beans and puree 1 cup with 1/4 cup broth until smooth.
5-Add 1 package (8 oz) light cream cheese cut into small cubes, 1 1/4 cup frozen corn, the whole beans, and the pureed beans to the pot. Stir well and simmer for 5 to 10 minutes.
6-Stir in 2 1/2 cups shredded cooked chicken, 1 tablespoon fresh lime juice, and 2 tablespoons fresh cilantro. Serve hot with optional toppings like shredded Monterey Jack cheese, additional cilantro, sliced avocado, and tortilla chips.
