– 3 large eggs, at room temperature
– 2 teaspoons pure vanilla extract or seeds from 1 vanilla bean
– ½ cup (120 g) full-fat sour cream, at room temperature
– 1 cup (240 ml) buttermilk, at room temperature
– 1 ½ cups (about 300 g) fresh, pitted, and chopped sweet cherries
Instructions
1-Preheat the oven to 325°F (163°C). Grease and flour two 8-inch round cake pans with at least 2-inch sides, and line the bottoms with parchment paper.
2-In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
3-In a large mixing bowl, cream the butter, oil, and sugar together until light and fluffy.
4-Add eggs one at a time, beating well after each addition, then stir in vanilla extract or vanilla bean seeds.
5-Alternately add the dry ingredients and the sour cream and buttermilk to the wet mixture, beginning and ending with the dry ingredients. Mix gently to avoid overmixing, which can lead to a dense cake.
6-Fold in the chopped fresh cherries, ensuring even distribution throughout the batter.
7-Divide the batter evenly between the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
8-Let the cakes cool in the pans for 10 minutes before turning out onto wire racks to cool completely.
