🌰 Vanilla Almond Granola Recipe offers a wholesome and crunchy snack packed with nutritious nuts and oats.
🍯 The sweet and aromatic blend of vanilla and almond extracts makes this granola a delicious addition to breakfasts or snacks.

  • Total Time: 1 hour 15 minutes
  • Yield: 2.5 to 3 cups

Ingredients

– 2 and 1/2 cups old-fashioned whole rolled oats

– 3/4 cup slivered or sliced almonds (raw or roasted)

– 1/2 teaspoon ground cinnamon

– Pinch of salt (about 1/8 teaspoon)

– 1/2 cup pure maple syrup

– 1/4 cup melted coconut oil

– 1/4 teaspoon almond extract

– 1 tablespoon pure vanilla extract

Instructions

1-First, set your oven to 300 degrees Fahrenheit and line a baking sheet with parchment paper. This preparation helps prevent sticking and makes cleanup a breeze, allowing you to focus on the mixing process.

2-In a large bowl, combine the oats, almonds, cinnamon, and salt, stirring them well. In another bowl, whisk the maple syrup and melted coconut oil together before adding the almond and vanilla extracts. Pour this mixture over the dry ingredients and mix until everything is evenly coated.

3-Spread the mixture out on your prepared baking sheet. Bake it for 45 minutes, remembering to stir every 15 minutes for even toasting. Once it’s done, let it cool completely on the sheet to get that satisfying crunch we’re all after.

Notes

🥄 Use old-fashioned rolled oats for the best texture; avoid quick or instant oats.
🥥 Coconut oil is key for creating clusters and crunch; substitute with vegetable oil or melted butter if needed.
🍓 Add dried fruit after baking to keep it from drying out and maintain texture.
