Ingredients

– 100 grams white granulated sugar

– 4 grams egg white powder (optional)

– 100 grams egg whites

– 105 grams almond flour

– 105 grams powdered sugar

– Food coloring in brown, dijon, yellow, orange, and red

– 2 1/2 cups powdered sugar (312 grams)

– 2 tablespoons meringue powder

– 5 to 6 tablespoons water

– Gel food coloring

– 4 tablespoons unsalted butter (56 grams)

– 1 1/2 cups powdered sugar (187 grams)

– 1/4 cup maple syrup (60 ml)

– 1 tablespoon heavy cream plus more as needed

– 1/4 teaspoon maple or vanilla extract

– Cranberry filling recipe

Instructions

1-Make the Swiss meringue: Whisk 100 grams white granulated sugar, 4 grams egg white powder (if using), and 100 grams egg whites over simmering water until the sugar dissolves, then whip to stiff peaks.

2-Fold in the sifted dry ingredients and food coloring until the batter is glossy and flows well. Divide it into colors, mostly brown with smaller parts in red, orange, and yellow.

3-Pipe a brown circle for the turkey head and add colorful feathers by alternating red, orange, and yellow. Tap the trays to remove air bubbles and fix any with a toothpick.

4-Rest the macarons for about 2 hours until they feel dry to avoid cracking. Bake one tray at a time for 15-20 minutes until they have feet and are firm.

5-Let them cool completely, then prepare the royal icing by beating 2 1/2 cups powdered sugar, 2 tablespoons meringue powder, and 5 to 6 tablespoons water until smooth. Add color and pipe on details like eyes and beak.

6-Finally, make the maple buttercream by beating 4 tablespoons unsalted butter, 1 1/2 cups powdered sugar, 1/4 cup maple syrup, 1 tablespoon heavy cream, and 1/4 teaspoon extract until smooth. Fill the shells and add cranberry sauce if you like.
