Instructions
1-First, in a mixing bowl, whisk together the cornstarch and water, then add the eggs, salt, and pepper until well combined.
2-Heat a 12-inch non-stick skillet over medium heat for 1 to 2 minutes and add the coconut oil to coat the pan.
3-Pour in the egg mixture, lifting and tilting the pan to spread it evenly like making crepes.
4-Cook for 2 to 3 minutes until the bottom sets, then flip carefully with a spatula.
5-Sprinkle the shredded Swiss cheese on top and cook for another minute until it melts.
6-Layer on the turkey, tomato slices, avocado, and spinach before rolling up the wrap and cutting it in half to serve.
