1 large tortilla, about 10 inches or burrito size
1 1/2 strips cooked bacon, cut into 3 half strips
1 large egg
1/2 avocado, mashed
1/4 cup shredded cheese such as mozzarella, cheddar, or Mexican blend
1 teaspoon unsalted butter for sautéing

Instructions
1-First: cook the bacon by cutting the strips in half and baking or sautéing until they’re crispy; you can do this ahead to speed things up.
2-Next: crack the egg into a bowl, season it with salt and pepper, beat it with a fork, and scramble it on a buttered non-stick skillet until it’s fully cooked.
3-Then: mash half the avocado in a bowl and season it with salt and pepper for a creamy touch.
4-Once your ingredients are ready, cut a slit from the edge of the tortilla closest to you to the center to make folding easier. Arrange the fillings in four quadrants on the tortilla: place the scrambled eggs in the bottom right, bacon in the top right, mashed avocado in the top left, and shredded cheese in the bottom left.
5-To fold, lift the bottom right quadrant up and then fold the rest over to form a triangle shape. Heat a small non-stick skillet over medium heat, melt the butter, and sauté the folded tortilla until it’s golden brown and crispy on both sides, adding more butter if needed. The whole process takes about 15 minutes, making it a great option for busy mornings.
