Ingredients

– 1 cup all-purpose flour

– 1/2 cup granulated sugar

– 1/4 cup cocoa powder

– 1 teaspoon instant coffee granules

– 1/2 cup unsalted butter, softened

– 1 large egg

– 1/2 teaspoon baking powder

– Pinch of salt

Instructions

1-Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper. This ensures even cooking and easy cleanup.

2-In a bowl, dissolve the instant coffee granules in 1 tablespoon hot water to release the rich coffee flavor.

3-In a separate mixing bowl, cream the softened butter with granulated sugar (or sugar substitute). Add the coffee mixture and egg (or flax egg for vegan) and blend until smooth.

4-In another bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing gently until just combined.

5-Using a tablespoon, scoop the batter onto the prepared baking sheet spaced about 2 inches apart to allow spreading.

6-Bake for 10-12 minutes or until the edges are firm and centers are slightly soft. Adjust baking time by monitoring softness for gluten-free alternatives which may require an extra minute.

7-Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Garnish with a light dusting of cocoa powder or powdered sugar before serving.
