Ingredients

– 12 dry and crispy Savoiardi lady fingers (approximately 100g or 3.5 oz)

– 2 to 3 tablespoons powdered sugar (about 20 to 30g)

– 1/3 cup (85g or 3 oz) cold mascarpone cheese, preferably at room temperature for easier mixing

– 2 to 4 tablespoons strongly brewed coffee or espresso, cooled to room temperature (about 30 to 45 ml)

– 2 tablespoons (about 20g) cocoa powder for coating

Instructions

1- Gather all ingredients and prepare the mise en place, including brewing strong espresso and chilling mascarpone for optimal consistency.

2- Crush the ladyfinger biscuits into fine crumbs using a food processor or by placing them in a plastic bag and breaking them with a rolling pin.

3- In a bowl, combine the lady finger crumbs, powdered sugar, mascarpone cheese, and 2 tablespoons of cooled espresso or strong coffee. Mix until the mixture sticks together when pinched. If the mixture is too dry, add more coffee a little at a time to reach the desired consistency, but avoid over-wetting to prevent it from becoming too soft.

4- If the mixture feels too soft or sticky for rolling, chill it in the refrigerator for 30 to 60 minutes until firm.

5- Scoop portions (about 1.5 tablespoons or a small cookie scoop size) and roll into smooth balls.

6- Roll the balls in cocoa powder or an alternative coating such as powdered sugar, sprinkles, coarse sugar, or melted chocolate.

7- Serve immediately or refrigerate and store in an airtight container for 3 to 4 days.
