Instructions

1-First, heat the olive oil in a large pot over medium-high heat. Add the chopped onion and sauté for about 5 minutes until it softens, stirring now and then to avoid burning. This base sets the foundation for the soup’s taste.

2-Next, mix in the grated ginger, minced garlic, and red curry paste. Cook for just 30 seconds to release their aromas, filling your kitchen with that wonderful Thai scent. Then, pour in the broth, water, and lime juice, and add the rice noodles before bringing it to a gentle boil on high heat.
