1-Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper for easy cleanup.

2-In a large mixing bowl, combine 1 pound of ground chicken, 2 finely minced green onions, 1 large egg, the zest of half a lime, 1/2 cup of panko breadcrumbs (or almond meal for gluten-free), 1 tablespoon each of minced fresh cilantro, grated lemongrass, grated ginger, and grated garlic, along with 1 teaspoon of kosher salt. Mix gently to keep the meat tender.

3-Shape the mixture into portions using about 2 tablespoons per meatball, forming them into even balls for consistent cooking.
