12 corn tortillas

2 limes, cut into wedges

Instructions
1. Prepare the marinade: Soak guajillo chilies in hot water until softened. Blend chilies with achiote paste, garlic, apple cider vinegar, cumin, oregano, salt, black pepper, and cinnamon until smooth.
2. Marinate the pork: Place the sliced pork shoulder in a shallow dish or ziplock bag. Pour the marinade over the pork, ensuring each piece is well coated. Refrigerate for at least 4 hours or overnight.
3. Cook the pork: Preheat a grill or skillet over medium-high heat. Drizzle with vegetable oil and cook the marinated pork until charred and cooked through, about 10 minutes. Let rest briefly, then thinly slice.
4. Warm the tortillas: Heat corn tortillas on a dry skillet or directly on the grill until soft and pliable.
5. Assemble the tacos: Place sliced pork inside each tortilla. Top with pineapple, onion, cilantro, and squeeze lime juice over the top.
6. Serve immediately with optional salsa and toppings on the side.
