Ingredients

– 1 ¼ cup pineapple juice (freshly blended from cored and diced pineapples)

– 1 ½ cup granulated sugar

– ½ cup apple cider vinegar or rice vinegar

– 1 teaspoon soy sauce (or tamari for gluten-free option)

– 5 fresh birds eye chilies minced (or 2 tablespoons chili flakes)

– 2 tablespoons minced garlic

– 1 teaspoon salt

– 2 tablespoons cornflour

– 4 tablespoons water

Instructions

1- In a deep pan, combine the pineapple juice, sugar, vinegar, minced garlic, minced chilies (or chili flakes), soy sauce (or tamari), and salt.

2- Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes. This step lets the flavors meld together beautifully!

3- While it’s simmering, mix the cornflour with 4 tablespoons of cold water to make a smooth slurry. This thickener is what gives your sauce that perfect glossy finish.

4- Reduce the heat further, then slowly whisk the slurry into the sauce. Stir constantly to avoid lumps and ensure even thickening.

5- Cook for another 3 to 5 minutes until the sauce reaches your desired consistency. Keep an eye on it, as it thickens more when it cools!
