Ingredients
6 Tbsp (≈ 85 g) softened unsalted butter, plus extra for greasing the pan
1 cup (≈ 125 g) all-purpose flour, plus extra for greasing the pan
3 ripe peaches, cut into bite-sized pieces (about 300 g)
¾ tsp freshly ground nutmeg
1 cup (200 g) granulated sugar, divided (2 Tbsp for the peaches, ¾ cup + 2 Tbsp for the batter)
1 large egg
½ cup (120 ml) buttermilk
½ tsp vanilla extract
¼ tsp almond extract
½ cup (≈ 55 g) almond flour or finely ground almonds
1 tsp baking powder
¼ tsp baking soda
A pinch of turbinado (or coarse) sugar for topping
Instructions
1-Preheat oven: Preheat oven to 350 °F (175 °C). Butter and flour a 9-inch (23 cm) round cake pan.
2-Toss the peach pieces: Toss the peach pieces with the nutmeg and 2 Tbsp of the granulated sugar; set aside.
3-Cream the butter: In a large bowl, cream the butter with the remaining ¾ cup + 2 Tbsp sugar until smooth. Add the egg, buttermilk, vanilla, and almond extracts; mix until combined.
4-Whisk dry ingredients: In a separate bowl whisk together the all-purpose flour, almond flour, baking powder, and baking soda.
5-Stir dry ingredients into butter mixture: Gradually stir the dry-ingredient mixture into the butter mixture, mixing until a smooth batter forms.
6-Transfer and top batter: Transfer the batter to the prepared pan, spreading evenly. Press the seasoned peach pieces into the top of the batter. Sprinkle a pinch of turbinado sugar over the surface.
7-Bake: Bake for 10 minutes, then lower the oven temperature to 325 °F (165 °C) and continue baking 45 55 minutes, or until a toothpick inserted in the center comes out clean.
