3/4 cup (180ml) water
1 and 1/4 cups (250g) granulated sugar, divided
Instructions
1-Wash and drain: Thoroughly rinse fresh cranberries and drain well to ensure the sugar sticks properly.
2-Make simple syrup: Combine water and 3/4 cup sugar in a saucepan; heat over medium until sugar dissolves, forming a syrup. Simmer a few minutes if desired, then let cool about 5 minutes.
3-Soak cranberries: Place cranberries in a heatproof bowl; pour cooled syrup over them, stir gently to coat, cover, and let soak for about 15 minutes.
4-Drain and dry: Use a slotted spoon to transfer berries to a parchment-lined baking sheet or rack; spread out and dry at room temperature for 1 hour to drain excess syrup and prevent sogginess.
5-Sugar coating: Toss sticky cranberries in remaining 1/2 cup sugar until well coated, adjusting quantity as needed for full coverage.
6-Final drying: Place sugared cranberries back on baking sheet; dry uncovered at room temperature for at least another hour, or refrigerate to speed drying.
7-Store properly: Store lightly covered at room temperature or refrigerated for several days. If moisture returns, re-toss in sugar before use.
