4 large baking potatoes

1 tablespoon olive oil

250 grams chopped bacon

250 grams chopped mushrooms

4 finely chopped spring onions

50 grams (4 tablespoons) cream cheese

1 medium egg

150 grams (5 ounces) grated cheddar cheese half for the mixture and half for topping

Salt to taste

Pepper to taste

Sour cream for serving

Extra chopped spring onions for serving

Chives for serving

Instructions

1-: Preheat your oven to 400°F (200°C) and bake the potatoes whole for 45-60 minutes until soft.

2-: Cut the potatoes in half and scoop out the flesh, leaving some in the skins for structure.

3-: Bake the empty skins for 10 minutes to make them crispy.

4-: In a separate pan, cook the bacon and mushrooms in olive oil until crispy.

5-: Mash the scooped-out potato flesh and mix it with the cooked bacon, mushrooms, 4 finely chopped spring onions, 50 grams of cream cheese (if using), 1 medium egg, half of the 150 grams grated cheddar cheese, salt, and pepper.

6-: Fill the mixture back into the potato skins, top with the remaining grated cheddar cheese, and bake for another 10 minutes until the cheese melts and becomes bubbly.

7-: Serve hot with sour cream, extra chopped spring onions, and chives if desired.
