Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or apply cooking spray.
Clean mushrooms by gently wiping them with a damp paper towel after a quick rinse; remove stems to create cavities.
Optionally, finely chop the stems and sauté with garlic for additional flavor in the filling.
Arrange mushroom caps cavity side up on the prepared baking sheet; drizzle with olive oil, and sprinkle with salt and pepper.
In a medium bowl, combine panko bread crumbs, grated cheese, chopped parsley, sun-dried tomatoes, pine nuts, minced garlic, salt, and pepper. Optionally, include minced shallots or cream cheese for additional flavor.
Carefully fill the mushroom cavities with the mixture, ensuring they are generously packed.
Drizzle the filled mushrooms with more olive oil, then bake for 18 to 22 minutes until tender and the filling is golden brown.
Allow to cool slightly, garnish with parsley and optional red pepper flakes, season to taste, and serve.
