Ingredients

– 2 sheets refrigerated pie crust Creates the flaky base and lattice top of the pie

Instructions

1-Preheat oven to 425°F (218°C) to get it ready for baking.

2-Combine 1 pound sliced fresh strawberries, 2 tablespoons lemon juice, ¼ cup cornstarch, and ¾ cup granulated sugar in a bowl; stir until everything is well coated and dissolved, then set aside.

3-Roll out one sheet of refrigerated pie crust and fit it into a 9-inch pie dish; press to remove any air bubbles and prick the bottom with a fork, then trim the excess dough.

4-Pour the strawberry filling into the crust and smooth the top for an even layer.

5-Roll out the second sheet of pie crust and cut it into ⅔-inch wide strips; weave these into a lattice pattern over the filling, trim excess dough, and optionally create a braided edge for a nice finish.

6-Whisk the large egg with a splash of water to make an egg wash; brush it over the lattice top and sprinkle generously with Demerara sugar.

7-Bake on the middle rack for 35-45 minutes, or until the crust is golden brown; if the edges brown too quickly, cover them with foil to protect them.

8-Cool the pie completely for at least 1 hour before serving to let the filling thicken properly.
