Ingredients

– 1 lb (about 450 g) sirloin or ribeye steak cut into cubes

– 2 tablespoons Cajun seasoning

– 2 tablespoons olive oil

– 12 oz (approximately 340 g) rigatoni pasta

– 2 tablespoons butter

– 2 cloves minced garlic

– 1 cup (240 ml) heavy cream

– 1 cup (240 ml) milk

– 1 cup (about 100 g) freshly grated Parmesan cheese

– 1 cup (about 110 g) shredded cheddar cheese

– salt and pepper to taste

– fresh parsley for optional garnish

Instructions

1-Prepare all ingredients: Measure out the steak, seasoning, garlic, cheeses, olive oil, salt, and pepper. Let the steak sit at room temperature for even cooking.

2-Boil the pasta: Cook the 12 oz of rigatoni in salted water until al dente, then drain it. This step takes about 10 minutes and sets the base for the dish.

3-Season and sear the steak: Toss the 1 lb of steak cubes with 2 tablespoons of Cajun seasoning. Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sear the steak for 2 to 3 minutes per side until done, then set it aside to keep warm.

4-Make the sauce: In a saucepan, melt 2 tablespoons of butter over medium heat and cook 2 cloves of minced garlic until fragrant. Stir in 1 cup of heavy cream and 1 cup of milk, then simmer gently.

5-Add cheese and season: Whisk in 1 cup of freshly grated Parmesan and 1 cup of shredded cheddar until the sauce is smooth. Season with salt and pepper to taste, and if it thickens, add a splash of pasta water.

6-Combine and serve: Mix the drained rigatoni with the cheese sauce until evenly coated. Top with the seared steak cubes and garnish with fresh parsley if desired. This takes the total time to around 35 minutes.
