5- Stuff the filling evenly into each chicken breast pocket.
6- Secure the openings with toothpicks (remember to remove before serving).
7- Heat olive oil in an oven-safe skillet over medium-high heat.
8- Sear the chicken breasts for 3-4 minutes per side until golden brown.
9- Transfer the skillet directly to the preheated oven.
10- Bake uncovered for 15-18 minutes, or until the chicken is cooked through (internal temperature reaches 165°F).
11- Optionally, broil for 1-2 minutes to further brown the top.
