4 cups fresh pineapple (smoked)
1 to 1 1/2 ounces mezcal or tequila blanco
1 ounce fresh lime juice
2 ounces orange liqueur (such as Cointreau)
1 to 2 tablespoons honey or agave nectar
2 to 4 fresh jalapeño slices (optional)
Chili lime salt or Tajín for rim garnish
Lime wedges and/or pineapple wedge for garnish
Ice cubes as desired

Instructions

Preheat grill or smoker to 250°F. Slice and peel the pineapple, then smoke for 25 minutes. Allow to cool for about 10 minutes.
Run a lime wedge around the edge of a glass, dipping it into chili lime salt or Tajín for a flavorful rim.
In a blender, combine cooled smoked pineapple, mezcal or tequila, lime juice, orange liqueur, honey or agave nectar, and jalapeño slices, if using. Add ice cubes and blend on high until smooth.
Pour the mixture into prepared glasses, garnish with lime or pineapple wedges, and serve immediately.
