3 tablespoons maple syrup (or 2 1/2 tablespoons honey)

2 tablespoons sriracha

1 1/2 tablespoons olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

1 can (400 grams or 14 ounces) chickpeas, drained but not dried

1 tablespoon olive oil for chickpeas

1/2 teaspoon smoked paprika

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon salt for chickpeas

1/4 teaspoon black pepper for chickpeas

1 cup plain yogurt (Greek or plain)

1/2 teaspoon finely grated garlic

1 tablespoon lemon juice

1 tablespoon extra virgin olive oil

1/4 teaspoon salt for yogurt sauce

2 tablespoons finely chopped coriander or parsley (optional)

3 tablespoons toasted and chopped pistachios (optional)

1 tablespoon maple syrup for optional extra sauce

1/2 tablespoon sriracha for optional extra sauce

Instructions

1-First off, get your oven ready by preheating it to 200°C/425°F (or 180°C fan) this step sets the stage for that irresistible caramelization we’re all after. Drain the chickpeas and spread them out on a baking tray to start their journey to crispiness. Meanwhile, toss your carrots with the Spicy Maple Sauce ingredients for a glossy coat that promises sweet-spicy magic.

2-Pop both trays into the oven, with the carrots on the top shelf for even roasting. After about 10 minutes, pull out the chickpeas, give them a quick mix with olive oil and spices, then slide them back in for another 20-25 minutes until they’re nice and crunchy. Keep an eye on the carrots, roasting them for a total of 30 minutes and flipping halfway to ensure they’re tender and beautifully caramelized.
