  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

– 2 packs enoki mushrooms

– 2 tablespoons oil

– 1 tablespoon coarse Korean chili flakes

– 1 tablespoon gochujang

– 1/2 tablespoon corn syrup

– 1/2 tablespoon granulated sugar

– 1/2 tablespoon soy sauce

– 1 teaspoon sesame oil

– 1/3 cup water

– Green onions, chopped

– Red chilies, chopped

– Sesame seeds

Instructions

1-First Step: Preparing the Enoki Mushrooms Start by trimming off the root section of the enoki mushrooms where they were attached together. Rinse them gently under cold water to remove any debris. Enoki mushrooms can be delicate, so handle them with care to avoid breaking the thin stems. After rinsing, pat them dry with paper towels to remove excess moisture, which helps with searing later. Next, slice the mushrooms into thin sections. While enoki mushrooms are already naturally thin, cutting them into shorter sections makes them easier to eat and allows the sauce to coat them more thoroughly. Aim for sections about 2-3 inches long. Set the prepared mushrooms aside on a clean plate or cutting board.

2-Second Step: Mixing the Spicy Sauce In a medium bowl, combine all the spicy sauce ingredients: 1 tablespoon coarse Korean chili flakes (or substitute with standard chili flakes or cayenne powder), 1 tablespoon gochujang (or sriracha/sambal if you don’t have gochujang), 1/2 tablespoon corn syrup (or honey), 1/2 tablespoon granulated sugar, 1/2 tablespoon soy sauce, 1 teaspoon sesame oil, and 1/3 cup water. Whisk the ingredients together until the mixture is smooth and well-combined. Take a moment to taste the sauce at this point and adjust the balance if needed. If it’s too spicy, add a bit more sweetener. If it needs more depth, add a pinch more soy sauce. This pre-tasting ensures your final dish will have perfectly balanced flavors.

3-Third Step: Searing the Mushrooms Heat 2 tablespoons of oil in a large pan or skillet over medium heat. Once the oil is shimmering, add the prepared enoki mushrooms in a single layer. Work in batches if necessary to avoid overcrowding the pan, which would cause the mushrooms to steam rather than sear. Sear the enoki mushrooms on both sides until lightly golden. This should take about 2-3 minutes per side. The goal is to develop some color and texture while still maintaining the mushrooms’ delicate structure. Don’t be afraid to let them get a little golden brown that’s where the flavor develops!

4-Fourth Step: Adding the Spicy Sauce Once your mushrooms are lightly golden on both sides, pour the spicy sauce mixture evenly over them. The sauce will begin to bubble and sizzle immediately. Using a spatula or wooden spoon, gently toss the mushrooms to coat them thoroughly in the sauce. Reduce the heat slightly and let the mixture simmer for 1 to 2 minutes. You’ll notice the sauce starting to thicken as it reduces. This is exactly what you want a glossy, clingy sauce that coats every strand of mushroom. Continue gently tossing the mushrooms to ensure even coating.

5-Final Step: Garnishing and Serving Remove the pan from heat once the sauce has thickened to your liking. Transfer the spicy enoki mushrooms to a serving dish, making sure to include all that delicious sauce. Top generously with chopped green onions, red chilies, and sesame seeds. These spicy enoki mushrooms are best served hot but can also be enjoyed at room temperature. They make an excellent appetizer, side dish, or even a main when paired with steamed rice. The vibrant colors from the garnishes not only add beauty to the dish but also provide additional layers of flavor and texture.
