2 tablespoons taco seasoning

2 tablespoons chili powder

1/4 cup olive oil

Kosher salt to taste

1 (8-ounce) can tomato sauce

2 cups hot water

Several dashes hot sauce

Good tortilla chips for layering

Cheddar jack cheese, freshly grated for layering

Pico de gallo to taste

Sour cream to taste

Sliced black olives to taste

Sliced green onions to taste

Cilantro leaves to taste

Guacamole to taste

Instructions

1-Sprinkle the chicken breasts with 2 tablespoons taco seasoning and 2 tablespoons chili powder, rubbing it in well for even flavor.

2-Heat 1/4 cup olive oil in a heavy skillet over medium heat and cook the chicken for about 4 minutes per side until it’s golden and cooked through. Let it rest afterward.

3-In the same skillet, whisk together 1 (8-ounce) can tomato sauce, 2 cups hot water, and several dashes hot sauce. Bring it to a gentle boil, then lower the heat and keep it warm, adding kosher salt to taste if needed.

4-Shred the rested chicken with two forks and toss it in the warm sauce, adding more water if it gets too thick.

5-To assemble, layer tortilla chips, grated cheddar jack cheese, and the shredded chicken in a heat-proof dish, repeating the layers and ending with chicken on top.

6-Heat in the microwave or a 350ºF oven until the cheese melts perfectly.

7-Serve right away with optional toppings like pico de gallo, sour cream, sliced black olives, sliced green onions, cilantro leaves, and guacamole.
