Ingredients

– ½ pound beef tenderloin or beef chuck for main protein

– 1 teaspoon salt

– 1 teaspoon sugar

– 1 tablespoon soy sauce

– 1 teaspoon Shaoxing cooking wine

– ¼ teaspoon baking soda

– 1 tablespoon corn starch

– ¼ cup water

– 1 teaspoon light olive oil

– ½ teaspoon chicken bouillon powder

– Pinch of white pepper

– 2 tablespoons vegetable oil

– 6 to 8 green onions, cut into 2-inch pieces adds crunch and nutrition

– 1 small white onion, sliced

– 2 garlic cloves, sliced

– 6 to 8 dried red peppers

– 1 tablespoon soy sauce

– ½ tablespoon sugar

Instructions

1- Prepare all your aromatics and dried peppers ahead of time to keep things organized.

2- Heat a pan or wok on high heat and add vegetable oil. Stir-fry the marinated beef until it’s browned, then cover the pan briefly to cut down on splatter. Set the beef aside once done.

3- In the same oil, add the dried red peppers and garlic; stir for about 1 minute to bring out their flavors.

4- Add the sliced white onion and stir-fry until it’s translucent, which takes about 1 to 2 minutes.

5- Return the beef to the pan with the peppers, onions, and garlic. Toss in the green onions, soy sauce, and sugar, then stir-fry for another minute before serving.
