6 to 7 crispy chicken tenders, cooked according to package directions
6 flour tortillas
6 romaine lettuce leaves
2 medium tomatoes, sliced
1 package frozen corn, thawed
1 tablespoon oil
1 can black beans, drained and rinsed
1 cup shredded cheddar cheese
1 1/2 cups mayonnaise (light mayo preferred)
1/2 cup salsa (any kind)
1/2 cup milk (1% or any kind)
3 tablespoons taco seasoning
1 tablespoon cumin
Instructions
1-Preheat your oven as per the chicken strip package instructions and bake the chicken strips until theyβre golden and crispy.
2-Mix Southwest dressing: In a small bowl, mix together the mayonnaise, milk, salsa, taco seasoning, and cumin to create that zesty Southwest dressing; set it aside for later.
3-Heat and brown corn: Heat the oil in a skillet and brown the thawed corn until itβs slightly charred for extra flavor.
4-Cut chicken: Once done, cut the baked chicken into small strips to make assembly easier.
5-Assemble wraps: Now, spread a couple of tablespoons of the Southwest dressing on the lower half of each tortilla. Layer on the romaine lettuce leaves, sliced tomatoes, black beans, corn, chicken strips, and shredded cheddar cheese. Drizzle more dressing on top, roll up the tortillas tightly, cut them in half, and serve with extra dressing on the side.
