2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon kosher salt

12 tablespoons chilled butter, grated

½ cup boiling water

⅓ cup white sugar

2 teaspoons cinnamon

1¼ cup brown rice flour

⅔ cup tapioca starch

⅓ cup potato starch

Instructions

1-In a large bowl, toss the sliced peaches with 1 teaspoon fresh lemon juice, ¼ cup white sugar, ¼ cup brown sugar, ¼ teaspoon cinnamon, ⅛ teaspoon nutmeg, and 2 teaspoons cornstarch or arrowroot starch. Pour this mixture into a 9×13 inch baking dish.

2-Bake the peach mixture for 10 minutes to get those juices flowing and enhance the flavors.

3-While the peaches bake, whisk together the crust topping: 2 cups all-purpose flour, ½ cup white sugar, ½ cup brown sugar, 2 teaspoons baking powder, and 1 teaspoon kosher salt. Add 12 tablespoons grated chilled butter and stir in ½ cup boiling water until just combined, keeping it lumpy for that perfect texture.

4-Remove the baking dish from the oven, then drop spoonfuls of the crust topping over the hot peaches. Sprinkle on the cinnamon sugar topping ⅓ cup white sugar mixed with 2 teaspoons cinnamon.

5-Bake again until the crust turns golden brown and a toothpick inserted into the topping comes out clean, about 28 minutes.

6-Let it cool slightly, then serve warm or at room temperature for the best experience.
