– 1 cup self-rising cornmeal
– 1/2 cup all-purpose flour
– 3/4 cup buttermilk

– 3 pieces white sandwich bread, crumbled after toasting
– 1/2 cup milk
– 3 eggs, lightly beaten
– 2 to 2 1/2 cups chicken stock or broth
– 2 tablespoons butter, for topping
Instructions
1-Preheat your oven to 350°F. In a skillet, melt 8 tablespoons butter and cook 3 chopped medium onions and 4 chopped celery stalks until soft, about 5-7 minutes.
2-Add 1 1/2 teaspoons dried sage, 1 teaspoon poultry seasoning, 3/4 teaspoon salt, and 1/2 teaspoon pepper to the skillet, stirring to blend the flavors.
3-In a large bowl, combine the crumbled cornbread with 3 pieces of crumbled white sandwich bread. Whisk together 1/2 cup milk and 3 lightly beaten eggs, then add this to the bowl along with 2 to 2 1/2 cups chicken stock or broth.
4-Mix in the cooked onion and celery mixture until everything is well incorporated. Pour into a greased 9×13-inch baking dish and dot the top with 2 tablespoons butter.
5-Bake at 350°F for 30 minutes or until lightly browned. Let it cool slightly before serving for the best texture.
