1/2 cup (120g) baking soda to be dissolved in 9 cups (2.13L) water for the baking soda bath
Instructions

3-Third Step: Place the dough in an oiled bowl, cover with a damp cloth, and allow it to rise in a warm spot for 1 hour or until doubled in size.
4-Fourth Step: Preheat the oven to 450°F (230°C). Line baking sheets with parchment paper.
5-Fifth Step: Divide the dough into 8 equal pieces. For a precise approach, cut into 75g sections and roll each into 20 22 inch ropes. Form each rope into a pretzel shape by making a circle, twisting the ends, and pressing them down.
6-Sixth Step: In a large pot, bring the baking soda water to a boil. Dip 1 2 pretzels at a time for 20-30 seconds, then drain and place on the prepared baking sheets.
7-Seventh Step: Sprinkle coarse salt on each pretzel and bake for 12 to 15 minutes until dark golden brown.
8-Final Step: Remove from oven, let cool slightly, and serve warm. For dietary adaptations, use gluten-free flour in step two or vegan butter for oiling the bowl.
