  • Total Time: 1 hour 15 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

1 lb bone-in chicken thighs

2 tsp granulated garlic for the spice mix

1 tsp paprika

1 tsp oregano

1/4 tsp chili powder

Salt and pepper to taste

1 cup all-purpose flour for coating the chicken

Oil amount as needed for pan-frying

1 small onion

2 garlic cloves

A pinch of crushed red pepper optional

2 tbsp butter

1 tbsp seasoned flour from the earlier mixture

2 cups chicken broth

1/2 cup heavy cream

Parsley for garnish amount as needed

Instructions

1-Seasoning and Browning the Chicken: First, take 1 lb of bone-in chicken thighs and rub them with a spice mix of 2 tsp granulated garlic, 1 tsp paprika, 1 tsp oregano, and 1/4 tsp chili powder, plus salt and pepper. Coat the chicken in 1 cup of all-purpose flour mixed with the same spices for extra flavor. Heat oil in a skillet and pan-fry the chicken for 4-5 minutes per side until golden.

2-After browning, set the chicken aside to rest. This step ensures it stays tender and flavorful when added back later. For tips on searing, pat the chicken dry and let it reach room temperature first, as this helps with even cooking.

3-Building the Sauce: Next, in the same skillet, sauté 1 small onion for 2-3 minutes until soft. Add 2 garlic cloves and an optional pinch of crushed red pepper, cooking for just 20 seconds to release aromas. Stir in 2 tbsp butter and 1 tbsp of the seasoned flour to create a roux, cooking it for 1-2 minutes to thicken.

4-Gradually whisk in 2 cups of chicken broth, letting it simmer for 2-3 minutes. Then, mix in 1/2 cup heavy cream and season with salt and pepper to enrich the sauce. This creates a creamy base that makes the dish irresistible.

5-Finishing and Baking: Return the chicken to the skillet and nestle it into the sauce. Bake everything at 425°F for 1 hour until the chicken is fully cooked. Use a thermometer to check that it reaches 165°F for safety. Garnish with parsley before serving over rice or veggies for a complete meal.
