Ingredients

– 1 3/4 cup diced carrots (about 3 medium carrots)

– 1 3/4 cup diced yellow onion (1 large onion)

– 2 tablespoons olive oil

– 5 cloves garlic, minced

– 3 cans (28 ounces each) whole Roma tomatoes

– 1 carton (32 ounces) vegetable broth

– 1/3 cup fresh basil, plus more for garnish

– 2 bay leaves

– 1 tablespoon sugar

– Salt and pepper to taste

– 16 ounces refrigerated three cheese tortellini

– 3/4 cup heavy cream

– Parmesan cheese, shredded, for serving

Instructions

1-First: heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 3/4 cup diced carrots and 1 3/4 cup diced yellow onion, and sauté for 3 to 4 minutes until they soften. Next, add 5 cloves minced garlic and cook for 1 more minute to release its aroma.

2-Transfer the mixture to a 6 to 7 quart slow cooker. Then, add 3 cans (28 ounces each) of whole Roma tomatoes, 1 carton (32 ounces) of vegetable broth, 1/3 cup fresh basil, 2 bay leaves, 1 tablespoon sugar, and salt and pepper to taste. Stir well, cover, and cook on low for 6 to 7 hours or on high for 3 to 3 1/2 hours.

3-After cooking, remove the 2 bay leaves. Blend the soup in batches using a blender or immersion blender until smooth. Return the soup to the slow cooker, stir in 16 ounces of refrigerated three cheese tortellini, cover, and cook on high for an additional 15 to 20 minutes until the tortellini are heated through. Finally, reduce heat to warm, stir in 3/4 cup heavy cream, and serve warm, topped with shredded Parmesan cheese and extra fresh basil.
