1 tablespoon Worcestershire sauce (or soy sauce substitute)

½ tablespoon tomato paste (or ketchup substitute)

4 teaspoons minced garlic

1 teaspoon poultry seasoning

1 teaspoon dried rosemary

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon dried thyme

2 bay leaves

½ cup (120 ml) milk or a dairy-free substitute like coconut cream

¼ cup cornstarch

1 ¼ cups frozen peas

Instructions

1-First, prepare your ingredients by placing the chicken, onion, carrots, potatoes, and celery into the slow cooker. This sets the base for all the flavors to blend together beautifully.

2-Next, whisk together the chicken broth, Worcestershire sauce, tomato paste, garlic, poultry seasoning, black pepper, salt, rosemary, and thyme in a separate bowl. Pour this mixture over the ingredients in the slow cooker, then add the bay leaves on top.

3-Cover and cook on low for 7-8 hours or on high for 4-5 hours, allowing the herbs and vegetables to create that rich, comforting taste. For tips on keeping things moist, such as lightly searing the chicken in olive oil beforehand, it adds color and flavor without much extra work.

4-About 20 minutes before serving, mix the milk or dairy-free substitute with cornstarch until smooth, then stir it in along with the frozen peas. This thickens the stew and adds a nice pop of color. Finally, remove the bay leaves and serve hot for a meal that’s as easy as it is delicious.
