3 Β½ cups chicken broth or stock

1 bay leaf

Β½ cup plain Greek yogurt

1 tablespoon cornstarch (optional, for extra thickness)

Instructions

1-Getting started with this chicken pot pie stew is as easy as tossing ingredients into your slow cooker. Begin by combining the chicken, diced onion, celery, carrots, minced garlic, salt, pepper, thyme, oregano, and chicken broth in the slow cooker pot. Don’t forget to add the bay leaf for that extra layer of flavor.

2-Cover and cook on low for 4 to 5 hours, letting everything simmer until the chicken is tender and the veggies are soft. Once done, remove and discard the bay leaf, then take out the chicken to shred it. Blend 1 Β½ to 2 cups of the stew liquid and contents until smooth, and stir it back in to naturally thicken the mixture.

3-For added thickness, mix 1 tablespoon cornstarch with Β½ cup of liquid and stir it into the pot. Add the shredded chicken along with the frozen corn, pearl onions, peas, and Greek yogurt. Cover again and cook on high for another 30 minutes until everything is heated through. Give it a taste and adjust the seasoning as needed before serving.
