🥩 This Slow Cooker Beef and Broccoli recipe offers a convenient way to enjoy a flavorful, tender meal with minimal hands-on time.
🥦 Perfect for easy weeknight dinners, it combines savory beef and crisp-tender broccoli in a rich, satisfying sauce.

  • Total Time: 3 hours 20 minutes
  • Yield: 4 servings

Ingredients

– 1 ½ pounds boneless beef chuck roast, cut into ¼-inch strips

– 1 cup low-sodium beef broth

– ½ cup low-sodium soy sauce

– ⅓ cup dark brown sugar

– 1 tablespoon sesame oil

– 3 teaspoons minced garlic (about 3 cloves)

– 2 tablespoons cornstarch

– 1 (12-ounce) bag frozen broccoli florets (about 3 cups)

Instructions

1-First: make the sauce: In a medium bowl, whisk together the beef broth, soy sauce, brown sugar, sesame oil, and minced garlic. It’s that easy mix that brings all the flavors to life! Then, place the beef strips into a 4-7 quart slow cooker and pour the sauce over them, tossing to coat evenly.

2-Next, cover and cook on LOW heat for 2.5 to 3.5 hours until the beef is tender. About one hour before it’s done, thicken the sauce by removing ¼ cup of the cooking liquid, whisking it with cornstarch, and stirring it back in. Finally, add the frozen broccoli florets in the last 30 minutes, stir gently, and let it cook until crisp-tender. Serve it up with rice and watch everyone dig in!
