3 tablespoons butter, divided

2 zucchini, cut into thin half-moon slices

Salt and black pepper to taste

1 small yellow onion, finely diced

1 pound small button mushrooms, cleaned and patted dry

3 to 4 cloves garlic, minced

2 teaspoons fresh herbs or 1 teaspoon dried herbs (thyme and oregano recommended)

1/4 cup vegetable broth

Chopped fresh parsley for garnish

Grated parmesan for garnish

Instructions

1-First: heat 1 tablespoon of olive oil and 1/2 tablespoon of the butter in a large skillet over medium-high heat. This step gets everything going with a nice base of flavors. Add the zucchini slices, season with salt and pepper, and cook for 3 to 4 minutes until they’re fork-tender, then set them aside and wipe out any liquid from the skillet.

2-Next: melt the remaining 2 1/2 tablespoons of butter in the same skillet over medium-high heat. Throw in the finely diced yellow onion and cook for 2 minutes until it softens up. Now, add the 1 pound of small button mushrooms and cook for 5 to 7 minutes, stirring now and then, until they’re browned and tender.

3-Stir in the 3 to 4 cloves of minced garlic and 2 teaspoons of fresh herbs (or 1 teaspoon dried), and cook for just 20 seconds to release those aromas. Return the cooked zucchini to the skillet, mix it with the mushrooms, and cook for 1 minute to heat everything through. Pour in 1/4 cup of vegetable broth and let it simmer for 2 more minutes, then adjust salt and pepper as needed.

4-Once it’s off the heat, sprinkle on chopped fresh parsley and grated parmesan for a fresh finish. This step adds a pop of color and extra taste that makes the dish irresistible. Serve it hot as a side or main meal, and feel free to add proteins like tofu for a heartier version.
