🍤 Shrimp Lo Mein Recipe serves up a quick, vibrant meal packed with tender shrimp and crisp vegetables tossed in a flavorful sauce.
🍜 This stir-fried noodle dish is simple to prepare, perfect for busy nights when you want a tasty and satisfying dinner.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

– 4 ounces dry egg noodles

– 8 ounces fresh egg noodles (or substitute with spaghetti)

– 1 tablespoon vegetable oil

– 8 ounces medium shrimp, raw, peeled, deveined, tails removed

– 4 cups coleslaw mix or finely sliced cabbage

– ½ red bell pepper, sliced

– 1 teaspoon fresh grated ginger

– 2 cloves garlic, minced

– 3 tablespoons low sodium soy sauce

– 1 tablespoon hoisin sauce

– 1 tablespoon water

– 1 teaspoon brown sugar

– 1 teaspoon toasted sesame oil

– Chopped peanuts

– Fresh bean sprouts

– Basil or cilantro

– Red pepper flakes

– Sambal or sriracha for added spice

Instructions

1-First, prepare all ingredients by peeling and deveining the shrimp, chopping vegetables into bite-sized pieces, and boiling the egg noodles according to package instructions until al dente. Drain and set aside to keep them from sticking.

2-Second, heat the vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and grated ginger, stirring for about 30 seconds until they release their aroma.

3-Third, add the shrimp to the wok and cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp and set it aside to rest.

4-Fourth, toss in the mixed vegetables like coleslaw mix and sliced red bell pepper, then stir-fry for 3-4 minutes until they’re tender-crisp. This step keeps the veggies fresh and crunchy.

5-Fifth, return the cooked shrimp to the wok along with the noodles. Pour in the sauce made from soy sauce, hoisin, water, brown sugar, and sesame oil.

6-Sixth, toss everything together thoroughly to coat the noodles and ingredients evenly with the sauce.

7-Final, taste and adjust seasoning if needed, then serve hot. Add optional toppings like fresh herbs or nuts for extra flair.
