Ingredients

– 5 7 large fresh scallops

– 5 7 large fresh shrimp, deveined, tail on

– Zest of 1 large lemon

– Juice of 1 large lemon

– 1 clove garlic, minced

– 1 tablespoon olive oil for marinade

– 2 teaspoons olive oil for cooking

– 3 tablespoons butter

– 4 large basil leaves, chopped for marinade and garnish

– Sea salt and freshly cracked black pepper to taste

Instructions

1-Step 1: Marinate for Flavor Combine the 5-7 large fresh scallops and 5-7 large fresh shrimp with the zest of 1 large lemon, 1 clove minced garlic, 1 tablespoon olive oil, and half of the 4 chopped large basil leaves. Pop it in the fridge for 1 hour. This quick step infuses every bite with bright, herby goodness. Prep time here is just 10 minutes.

2-Step 2: Prep for Searing Remove the seafood from the marinade and pat dry thoroughly with paper towels. Season with sea salt and freshly cracked black pepper to taste. Drying is crucial for that golden crust, just like my tip below.

3-Step 3: Heat the Skillet Heat 3 tablespoons butter and 2 teaspoons olive oil in a skillet over medium-high heat until hot and shimmering. This takes about 2 minutes and sets up perfect searing.

4-Step 4: Sear the Scallops Add the scallops first. Cook 1-2 minutes per side until golden brown. Don’t move them too soon for the best crust.

5-Step 5: Add Shrimp and Lemon Flip scallops, then add the shrimp and juice of 1 large lemon. Cook another 1-2 minutes until shrimp turn pink and curl slightly. Total cook time: about 5 minutes. Avoid overcooking to keep seafood tender.

6-Step 6: Garnish and Serve Sprinkle the remaining chopped basil on top. Serve immediately with lemon wedges, rice, or vegetables. Total time: around 1 hour 15 minutes.
